When Brian is not here I get much less sleep.

One reason being that he has to go to work early in the mornings when he is here so he needs to go to sleep earlier and I go to bed with him. So when he isnt here I can stay up on the computer and there is no one to make me go to bed... This is a bad thing....

Then on nights like tonight when I force myself to bed, I still cant even fall asleep.... My mind will not shut off! Way to much is going on tomorrow, like work when I have to dress up. Which I haven't even gotten a costume pulled together yet. Right after work is Hallelujah night at Church. Than Brian is coming home for the weekend so I want to get the house all sparkly for when he gets home so he doesn't think I have been a bum while he was gone.

So now I have scrubbed the kitchen, worked on our budget, and folded laundry..... I still am wide awake but am going to try to go to sleep again.... I would go pull a costume together right now but I dont really want to go in the garage to look for clothes, its cold and there are probably bugs in there. I think I am going to go with cowgirl though..... But we will see!

Homemade Applesauce

This turned out to be really good! I was a little nervous while making it 1. because I had never made it before 2. because all of the recipes I looked up online said to use more than one kind of apple and I only had some red delicious apples. It turned out really great though! This was so simple and easy to make!



Homemade Applesauce:

I pretty much eyeballed everything but this is my method.

Ingredients:
5 Apples
Vanilla
Lemon Juice
Water
Cinnamon

Peel, core and cut apples into uniform cubes. Squirt some lemon juice on the apples to keep them from browning. Place about 1 inch of water in a large pot. Add apples to pot and put over high heat. Once water starts to boil turn heat down to medium. Cook until apples are tender. Remove apples from pot and mash with a potato masher or food processor. I just mashed with my potato masher it left the apple sauce a little chunky which I like. Then I added a dash of vanilla and a dash of cinnamon to taste.

And now I am eating the applesauce warm! Mmmmmmmmmmmm!

It has been chilly here in NC recently, while I was at the store I saw the holiday teas and thought that that might be what I need to warm me up. I had to try the candy cane! Im so glad that I did! It is really good, I think that I am going to have to start off my mornings with this from now on!

My other love that you have to try is dried pineapple! This brand is Mariani, I was really excited to eat it and I ripped into it before I took the picture. This stuff is so good. One day I am going to pull my dehydrator down from the attic and make my own so that I can control the sugar levels... but for now this hits the spot!

Kale Chips

Well today is Brians first full day of Sgt.'s Course. So that means I am flying solo for the rest of the week and all of the weekdays until December (He gets to come home for the weekends).

That means I get to be creative with what I eat. I am trying to aim for eating really healthy while he is gone. I have found two new favorite blogs one is thepioneerwoman.com she has some really great recipes on her site. The other is katheats.com her site is all about healthy food. She makes these things called Kale Chips. I am not much of a leafy greens person. I really prefer the lettuce that is almost white/clear and has basically no nutritional value. In fact when we order salads at restaurants I have been known to pick out all of the "green" lettuce and put it on Brians plate and take all of his "white" lettuce. So why did Kale chips catch my fancy? I have no idea. But they were only .79 cents for a bunch at the store so I figured that I could try them and not be out that much money if I didn't like them. So here is the method for making the Kale Chips:

Preheat oven to about 375*
Use one big bunch of Kale.
Trim off stems and cut into bite size pieces.
Spread out on cookie sheets.
Drizzle with about 2 tsp of olive oil
Sprinkle with seasonings of choice. ( I chose Parmesan, Salt, Pepper, Lawry's Seasoning Salt, and my Roasted Garlic Salt Grinder.)
Bake for about 15 minutes, until edges are brown and kale is crispy when moved in pan.

Oh my goodness these are actually really good. They do taste kinda potato chips. I will definitly be making these again! Next time I will do a little less salt though. What a fun way to get in those greens!

Mac and Cheese

Tonight for dinner I made Macaroni and Cheese 1 from the Deceptively Delicious Cookbook. Can you tell that I love that cookbook? I made some alterations to the original recipe to suit our tastes. It came out really good and I love that there is a hidden veggie in it!



Here is my altered version of the recipe:
Macaroni and Cheese

I Box Elbow Macaroni
2 T Olive Oil
2 T AP Flour
2 Cups Skim Milk
1 Cup Butternut Squash Puree (Or you can use Cauliflower)
3 Cups + 1/2 Cup Shredded Cheddar Cheese
1 block of Cream Cheese (8 oz)
Salt
Pepper
Paprika
Garlic Salt
1/2 Cup Homemade Croutons (See recipe a few posts below)

1. Preheat oven to 350 degrees. Bring a large pot of salted water to a boil, add the pasta and cook until al dente. Drain in a colander.

2. While pasta is cooking place a large sauce pan over medium heat. When heated add oil and flour, cook stirring constantly until the mixture resembles a thick paste but is not browned.

3. Add the milk and cook stirring occasionally until mixture begins to thicken. Add the puree, 3 cups cheddar, and cream cheese and stir until cheese is melted and sauce is smooth. Season to taste. Stir Pasta into sauce and pour into a 9x13 in baking dish sprayed with cooking spray.

4. In a ziplock bag crush 1/2 cup homemade croutons. Mix leftover cheese with the croutons and sprinkle over the top of the pasta. Bake for 20-30 minutes depending on how brown you like the top.

Enjoy! Another way to make Mac and Cheese a little healthier is to add in some cooked broccoli to the Mac and Cheese. Or if you are going to be baking it you can put sliced tomatoes on the top and then bake it. That is super good but Brian doesnt like tomatoes.... I am working on him though :)

Chocolate Chip Banana Bread

I love Banana Bread! And this recipe is my favorite for the Chocolate Chip variety! This recipe comes from goodthingscatered.blogspot.com her blog is really great for finding recipes and they are always super easy to follow with lots of pictures!

Chocolate Chip Banana Bread

Ingredients:
1 3/4 c. plus 2 Tbsp all purpose flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 package instant vanilla pudding mix
1 heaping c. chocolate chips
2/3 c. granulated sugar
1/2 c. shortening
2 eggs
2 Tbsp milk
1 Tbsp vanilla extract
3 large extra ripe bananas, mashed

Directions:
-Preheat oven to 350 degrees and prepare loaf pan.
-In medium bowl, combine all flour but 2 Tbsp, baking powder, baking soda, salt, and pudding mix.
-Whisk to combine and set aside.
-In small bowl, combine remaining flour and chocolate chips, tossing well to combine and set aside.
-In bowl of stand mixer, combine shortening and sugar.
-Beat on high until light and fluffy, about 2 minutes.
-Add eggs, one at a time until thoroughly combined.
-Add milk and vanilla, then banana to mixture and combine well.
-With mixer on low, add flour mixture until just combined then fold in chocolate chips.
-Spread into loaf pan, tap to remove air pockets, and place in oven to bake.
-Bake loaf in oven for 1hr or until toothpick inserted into center comes out clean.
-Let loaf cool in pan for 5 minutes, then turn out onto wire rack to cool completely (or serve warm! Yum!)

Update on MECEP Board and other random info

We found out this past week that the board that is going to decide who gets to do the MECEP Program has been pushed back again this time it is supposed to meet November 10th. First it was supposed to meet in August, then October and now November and with that date being the Marine Corps Birthday which is a busy time in the Marine Corps I honestly am guessing that we will find out in January.

In other news it is chilly here now! I actually got to wear a sweater on Sunday and our A/C will most likely be off until the spring now!

We had gotten a really low electric bill this past month and we didnt really know why. Well this morning a man from the electric company came out to do the regular check of the meter and he told me that it was old and had stopped working. I asked if that was bad for us and he told me that it was good for us bad for the power company. So we may not have an electric bill this month! :)

Dinner Time

Brian loves Asian food... Me... Not so much. Its not really that I dont like the taste but more that I dont like the cleanliness of most Chinese restaurants. Well that and the whole mystery meat thing... I know that they call it chicken but I dont always believe that. I mean I really do like P.F. Changs (their Lettuce Wraps are amazing!) and I like that place down in Seattle that we go to with Grandpa B. I think its called Louie's but I could be wrong.

So last night in an effort to please my hubbys stomach I tried this Wanchai Ferry Sweet and Sour Chicken Meal Kit.


It turned out really good! I was really simple to make too! You just have to boil the rice and cook the chicken and then mix everything together. It came together pretty quick too! I should have taken a picture of what it looked like on our plates because it looked so good but we gobbled it up right away! I give this meal an A+ and I suggest that you try it out for yourself! I especially like that you can know exactly what part of the chicken is in your meal! It also says that you can make it with shrimp instead that would probably be really good too!

A gift from Simba



Last night Simba's parents stopped by to drop off this gift basket for me that they made to say thank you for finding their dog. Inside the gift basket was a treat container with lots of doggie treats, some balls for the doggies, some stuffed toys (that Sadie has already managed to tear the stuffing out of :) ... shes a crazy dog) and a sweet card. The card was so cute and was written by the dog heres what is said:

Hi,
I was cold, wet and frightened but you rescued me- Thanks! Then you found my Daddy and Mommy because they were lost. Without your help they would have been lost forever- Thanks! Again, Thank you for taking me into your warm home and caring for me until my parents could be located. Simba

Dealing with conflict God's Way

Tonight, at church of all places, I experienced a conflict with a member of our church. This was not a little conflict. This person verbally attacked me and slandered my charcter. This was something that I would never have expected from a saved person. Actualy I would not even expect to be treated this way by an unsaved person either, it was that harsh. All that was said about me was said with no merit at all and was completely false. After our first little instance where she belittled me I was calm and walked away and then cried in the parking lot. I got in the car and talked to Brian about it and we decided that we needed to go back into the church and talk to her and her husband immediately so that the situation did not escalate and so that there would not be any dissention within the body (i.e. the church). We tried to just speak with them one on one but when that was not working we asked our Preacher for help with this matter. (Now let me tell you... We have a great Preacher, he is genuine, caring, and a great friend. I have no doubt that if any part of this would have been on me, he would have called me out and made me completely aware of my sin.) After a little more trying to reason, we had said our peace so we left and the Preacher stayed back with them and talked the issue out. Needless to say about 1/2 hour after we had left the church we got a call from the preacher telling us what he discussed with the other couple and that the other couple would be calling us in a little while. About 15 minutes later we got the call. She apologized to me and to Brian. I am glad that we now have resolved this issue. I am also glad that God is testing me. I know this sounds a bit odd but if He is testing me that means He is working on me. And if He is working on me that is a good thing because He is using things to strengthen my faith!

I told you all of this to tell you this.... When conflicts come into your life, deal with them God's way. I truly feel that we dealt with this in exactly the manner that God expects from us. Had I just stayed in the car and cried and then gone home, nothing would have been resolved, church fellowship would be awkward, I'm sure gossip would have run rampant, and the devil would have been given way to many prime opportunities to cause us and those around us in our congregation to sin. This is just another example of that God's will and way will always be better than our way or our will. God designed a way for us as Christians to deal with conflicts is is found in Matthew 18:15-17.

15"If your brother sins, go and show him his fault in private; if he listens to you, you have won your brother.

16"But if he does not listen to you, take one or two more with you, so that BY THE MOUTH OF TWO OR THREE WITNESSES EVERY FACT MAY BE CONFIRMED.

17"If he refuses to listen to them, tell it to the church; and if he refuses to listen even to the church, let him be to you as a Gentile and a tax collector.



But then there is the part about the forgiveness after the issue has been resolved. I will be honest right now I am still a little shaken and hurt about the things that were said to me. I forgive her for saying them but it is hard not to associate my hurt feelings with her. I am praying that God will help me to completely forgive her and move on from all of these emotions and I am also praying for her. Just a few verses down in the chapter we learn about forgiveness. Matthew 16: 21-35

21Then Peter came and said to Him, "Lord, how often shall my brother sin against me and I forgive him? Up to seven times?"

22Jesus said to him, "I do not say to you, up to seven times, but up to seventy times seven.

23"For this reason the kingdom of heaven may be compared to a king who wished to settle accounts with his slaves.

24"When he had begun to settle them, one who owed him ten thousand talents was brought to him.

25"But since he did not have the means to repay, his lord commanded him to be sold, along with his wife and children and all that he had, and repayment to be made.

26"So the slave fell to the ground and prostrated himself before him, saying, 'Have patience with me and I will repay you everything.'

27"And the lord of that slave felt compassion and released him and forgave him the debt.

28"But that slave went out and found one of his fellow slaves who owed him a hundred denarii; and he seized him and began to choke him, saying, 'Pay back what you owe.'

29"So his fellow slave fell to the ground and began to plead with him, saying, 'Have patience with me and I will repay you.'

30"But he was unwilling and went and threw him in prison until he should pay back what was owed.

31"So when his fellow slaves saw what had happened, they were deeply grieved and came and reported to their lord all that had happened.

32"Then summoning him, his lord said to him, 'You wicked slave, I forgave you all that debt because you pleaded with me.

33'Should you not also have had mercy on your fellow slave, in the same way that I had mercy on you?'

34"And his lord, moved with anger, handed him over to the torturers until he should repay all that was owed him.

35"My heavenly Father will also do the same to you, if each of you does not forgive his brother from your heart."



Tonight as I was doing my devotions I was in Proverbs 17-20. Let me tell you, right when I opened up to this passage and started reading I was instantly awestuck with how God works every detail of our lives out. There could not have been a better passage to read after all of the events tonight. There was encouragement in that I was doing what was acceptable to God and following what He directs and calls me to do. There was also conviction and challenge in that I need to not be haughty about this issue, I need to be humble and I need to be quick to forgive. I would post the whole passage but it is pretty lengthy so I urge you to go "dive" into it on your own this week!

The verse that stuck out to me the most and is going to be on my mind this week is Proverbs 19:11

11 A man's discretion makes him slow to anger,
And it is his glory to overlook a transgression.


That is the NASB verson as are the other passages but I especially like the way that it is worded in the NLT:

11 Sensible people control their temper;
they earn respect by overlooking wrongs.


I feel that I accomplished the first part of this verse tonight but now I am really working on accomplishing the second half of the verse! Your prayers are always appreciated!

I got to be a hero today :)

Today I found a this little dog named Simba wandering outside of our house. I went outside to see if he had tags and would come to me. He was little and scared so I picked him up and then went inside to call his owners. I didnt get an answer at any of the numbers. Their voicemail said that they were pastors for a church down the road so when Brian got home I had him run over to the church to see if anyone was there. There wasnt. I was getting a little worried that they wouldn't call back because it had been almost two hours since I had first called them. But I just got a ring on my doorbell and it was them coming to get their baby! They had been out looking for him that is why they missed my calls the first time. They were so glad that I had found him and called them especially since it has been raining here all day long. They were so grateful and said that I was their hero :) I just hope that if one of our doggies gets out one day that some other dog lover will find them and give me a call!

Two Healthy Tips

Inspired by Jessica Seinfeld's book Deceptively Delicious!

The first I found out while making her recipe for Aloha Chicken. Brian loves this stuff. Anyways the tip is everytime that you are "breading" anything whether it be chicken, cheese, or otherwise throw in some Flax Seed Meal. Flaxseed Meal is super good for you because it contains Omega-3 Fatty Acids which have been shown to inhibit tumor growth and prevent prostate cancer. The main source that humans get Omega-3's from is fish so if you are not a seafood person I strongly suggest you get some flaxseed meal!

The second I tried just the other day. In her book she has a recipe for Mashed Potatos where you mix in Cauliflower. I didn't use her recipe in this one but instead I added 1/2 cup of pureed cauliflower to my regular recipe for potatos. Brian will not eat cauliflower if I just make it so I have to sneak it in. I didnt even tell him there was cauliflower in it until after he had eated quite a bit and said that they were good :) Cauliflower boosts the nutritional value of the potatos and is almost undetectable. Cauiliflower is good for you because it is part of the Cruciferous family of vegetables that are known to contain many cancer preventing phytochemicals as well as reduce the carcinogen activation in the liver and other cells.

I have been a terrible composter lately. Most of the time I have just been throwing our food scraps right on top of our compost pile without turning it or adding more dry material. This is not what should be done and this has caused my compost to be overrun with flies. So I decided to add more "brown" material today in the form of leaves. We have tons of leaves in our yard and its about time I put them in the compost. Hopefully this will put a stop to my fly problem!

Right now my compost bin consists of an old trash can that I drilled tons of holes into. It works nicely but one day I would love to own one of these:

This is the Tumbleweed Compost Tumbler, I have been drooling over this for quite a while now. All you need to do is put your scraps in and then flip it, that tumbles the compost helping it to decompose faster.

Or this Naturemill Automatic Composter would be nice and convenient since it would be housed in the kitchen.


Just in case you are wondering how to compost the general rule of thumb is that you want to keep the consistency of your compost to 1 part green matter to 2 parts brown matter. If you keep your compost at that ratio you should have no problems with smell or insects. BHG.com has some great videos for how to make a compost pile as well as what is classified as brown and what is classified as green.

Uwharrie Camping Trip 2008

This past weekend we went on a wheeling/camping trip to Uwharrie National Forest with our friends Kyle and Joy. On the way there Brian was so excited for this trip that he described himself as "giddy" :) Uwharrie is about 4 hours away so on our first day we didnt arrive there until it was starting to get dark. The second day we woke up and went out on the trails. I was a little nervous about this trip because I thought that I didnt like wheeling, well it turns out that I do! Brian made the trip and the trails really fun, some of the fun was more nervous laughter because I thought we were going to roll the jeep but fun none the less :) Brian even let me drive! I had a lot of fun doing that and I actually made it over a few obstacles. Brian said he had fun navigating me along the trail! Kyle let Joy drive for a little while also. After a few hours of wheeling we decided to go back to the camp for some dinner, after dinner we headed back out on the trail for some night wheeling. That was fun also because at night it almost feels like you are on the indiana jones ride at disneyland :). Kyles Jeep got a little bit beat up that day/night and now has some battle wounds. The next morning we all woke up later than we had expected so we got a late start. We went on a trail that we had not done yet and it was my favorite! The weather was so beautiful and warm and some of the trees were starting to turn to fall colors it was gorgeous! After that trail we went back to the "difficult" trail. Not to far up that Kyle bent his tie rod to a 90 degree angle, while the boys were trying to pound that back into shape, 4 people on ATVs came to come down that slope we were on (which was at a pretty big angle and had lots of loose rock) the first 2 ATVs pass us and make it fine, the third person flipped his ATV but was able to jump off in time and not get hurt. I think that the fourth person saw the other guy fall and got distracted a bit because we took the slope at a bad angle and rolled his ATV also. It was so scary Joy and I were sitting down and we see him try to jump off and the ATV start to go down the slope and by the time we get up to see what had happened the ATV was on top of him and he was face down. It was the scariest feeling wondering if he was okay. Brian and Kyle ran down there to help them get the ATV off of him. He was banged up quite a bit but he is alive and that is what is important!!! After that we just went back to camp so that Brian and Kyle could try to fix Kyles Jeep some more. It didnt really get fixed. It really was a great trip though and I wish that they weren't moving to Japan so that we could make this an annual trip! Here are some pictures! Here is me driving! If you notice in the picture above this one Brian is biting his lip and in this picture I am biting my lip. i think I learned that from watching him drive! I didn't notice that till I was looking at the pictures when we got home :)
