Kenley had her 5 year check-up last week!

My "big" girl! She weighed in at 33.9 pounds. I'm pretty sure there are 1 year olds somewhere that weigh more than Kenley :). 



Since she is 5 she also did an eye exam and a hearing test! It's funny because I thought she got a ton wrong on her eye test, turns out it was me... I went back a few days later and now am searching for some cute glasses to wear occasionally :) 

Every time Kenley lifted her hand to let the Corpsman know what ear she heard from, Claire cheered for her and told her great job or gave her a thumbs up! She is such an encouraging girl!

First of all I feel the need to apologize to my Vegetarian Mom.. Second I feel like I need to apologize to my Paleo/Gluten Free friends... 

Now that we got that out of the way, I would like to introduce you to our new favorite snack/appetizer/sometimes breakfast... 

The idea for these came to me as I was reading my copy of The Essentially Lilly Guide to Colorful Entertaining by Lilly Pulitzer and Jay Mulvaney. In it there is a blurb about how when Lilly would have people over she would put them to work. "Good hostess that she is, she sets you up with a task- punching out bread rounds, chopping bacon, and spreading peanut butter to make one of her favorite 'crispy crits'- the minute you walk in the door" -pg. 4 

Peanut butter and bacon.. that sure sounded good to me but unfortunately the recipe wasn't in the book nor could I find it online so I googled peanut butter and bacon found a few different appetizers and then improvised! These definitely remind me of something my grandma would have made in the 50's which in my book is a good thing! 

Peanut Butter and Bacon Snacks
aka my version of Lilly Pulitzer's Crispy Crits

Ingredients:
White Bread
White Chocolate Wonderful Peanut Butter
Bacon, cooked to crispy
Butter, melted

Directions:
1. Preheat oven to 425 degrees
2. Remove crusts from bread
3. Brush BOTH sides of bread with melted butter
4. Chop up your crispy bacon
5. Spread peanut butter on one side of the bread
6. Evenly distribute chopped bacon over your peanut butter bread
7. Cut bread slices into quarters
8. Place peanut butter bacon bread squares evenly on a baking stone
9. Cook for 8-10 minutes
10. Serve immediately and enjoy!!

Pumpkin garland making...





CLo had to get a physical for Preschool. She is 38 inches tall and weighs 30.9 pounds! 


I call this the Walmart dinner :) Pretty good for nights when I just can't bring myself to cook and yet don't want to go totally off course with fast food! 
Rotisserie Chicken, French Bread, Cucumbers, Bell Pepper, Grapes, and Cheesy Yum (1 Container Ricotta mixed with 1 Cup Parmesan Cheese)

Apparently Claire isn't really that captivated by our latest read aloud book :) 

We had last Thursday off of CC which meant that we could go to the library for story time with Miss Deb! 


She has grown a little bit since last time she was photographed in this dress :) 

Craft time! 

Brian couldn't find Claire's jersey so he dressed her in his Seahawks outfit from when he was a baby! 


The highlight of the girls week was attending Lily's Frozen Party! During the party there was a coronation ball and all the girls (and boys) were each announced and then got to dance while Mr. Phil played Frozen songs on the piano. It was a hit for sure! 

The Ronks go to the Pumpkin Patch!

Last Friday we headed out to Mike's Farm outside of Jacksonville to pick some pumpkins! 



We have no idea what kind of gourds these are, but we do know that they make a J for James! :)

I feel like we are just starting to get a few glimpses of Fall around here. There was a crispness in the air the other day that was so refreshing! I really love October in North Carolina! The weather has cooled so that we can start to enjoy park days, bike rides, and overall being outside more!

What better way to enjoy Fall than to drink a Pumpkin Spice Latte right?

Paleo Pumpkin Spice Creamer

Ingredients:
4 Tbsp Butter
4 Tbsp Honey
Pinch Himalayan Pink Salt
4 Tbsp Pumpkin Puree
1 T Pumpkin Pie Spice (you can add more or less depending on how spicy you like it)
1 Can chilled Coconut Cream or Coconut Milk

Directions:
1. Add butter and honey to a pan set over medium heat.
2. Stirring constantly, allow butter honey mixture to come to a boil.
3. Continue to stir for 5-10 minutes until butter honey mixture turns into caramel.
4. Once caramel has thickened stir in salt, pumpkin puree, and pumpkin pie spice.
5. Remove from heat and allow to cool a little bit.
6. Stir in your can of coconut cream.
7. Pour creamer mixture into a mason jar and store in the refrigerator.
8. Add to your coffee and enjoy!
(I like using my little electric whisk thingy from Ikea to make it frothy!)

You should definitely make Detoxinista's Paleo Pumpkin Bars to enjoy with your coffee! I have made 4 batches so far and everyone who has tried them really likes them! They are great for breakfast, an afternoon snack, or dessert! (I bake mine for 30 minutes though!)

Lego Dude Magnets!

I have been meaning to post this for a super long time! This has become one of the girls favorite crafts to do and we have done it a lot! Our fridge definitely has no lack of magnets now! 

Here are the supplies that you will need: A hot glue gun, lots of glue sticks, a Lego Minifigure Ice Cube Mold, yellow spray paint, acrylic paints, clear sealer, a sharpie, and some small magnets.



Step one is to fill your Lego mold with hot glue... Yes really! Be careful not to burn yourself though! I have some experience with that! Allow glue to harden completely before attempting to remove glue from mold. This takes about 15-20 minutes. 


 Next, add a few coats of yellow spray paint to your Lego dudes. This step is optional but I highly recommend it if littles will be painting these Lego dudes! 

The first time we did this project we didn't do the yellow spray paint first but the girls have a hard time with some of those little details like the hands, so now we always do the spray painting step! 



The painting step is obviously the girls favorite part!


After your Legos have dried you can add the faces with Sharpie. At first I wanted to do this step my self.. but then I let the girls do it and I am so glad that I did. Their little faces are so wonky! I love it! Especially that one second from the left! Hilarious!

Once the faces are dry you will want to add of coat of clear sealer to the whole Lego dude. 

Hot glue some magnets to the backs and you are all done! 


I had to get in on the action and paint a 12th Man :) 

The girls have been loving Ninjago lately, so this week Kenley made Ninjas! 

The girls friend, Valor, had a Lego party this summer so we made him a own Paint-Your-Own Lego Dude Kit for his birthday! 



If you make these let us know! It is a super fun craft for little Lego lovers! I think these little Lego dudes would also make great game pieces!
