Paleo Pumpkin Spice Creamer

I feel like we are just starting to get a few glimpses of Fall around here. There was a crispness in the air the other day that was so refreshing! I really love October in North Carolina! The weather has cooled so that we can start to enjoy park days, bike rides, and overall being outside more!

What better way to enjoy Fall than to drink a Pumpkin Spice Latte right?

Paleo Pumpkin Spice Creamer

Ingredients:
4 Tbsp Butter
4 Tbsp Honey
Pinch Himalayan Pink Salt
4 Tbsp Pumpkin Puree
1 T Pumpkin Pie Spice (you can add more or less depending on how spicy you like it)
1 Can chilled Coconut Cream or Coconut Milk

Directions:
1. Add butter and honey to a pan set over medium heat.
2. Stirring constantly, allow butter honey mixture to come to a boil.
3. Continue to stir for 5-10 minutes until butter honey mixture turns into caramel.
4. Once caramel has thickened stir in salt, pumpkin puree, and pumpkin pie spice.
5. Remove from heat and allow to cool a little bit.
6. Stir in your can of coconut cream.
7. Pour creamer mixture into a mason jar and store in the refrigerator.
8. Add to your coffee and enjoy!
(I like using my little electric whisk thingy from Ikea to make it frothy!)

You should definitely make Detoxinista's Paleo Pumpkin Bars to enjoy with your coffee! I have made 4 batches so far and everyone who has tried them really likes them! They are great for breakfast, an afternoon snack, or dessert! (I bake mine for 30 minutes though!)

Ooh, this sounds good Keri! I made a pumpkin spice latte syrup I found on Pinterest, it was really good, nothing like pumpkin in the fall!
