Brian and I got to hang out all day today so we took a trip to Morehead City! The Habitat for Humanity Resale Store was a bust this time, but then we headed to Panera Bread and that was great! Their Baked Potato soup is really good! We stopped at Ross to see if they had anything good and I got some new cutting boards for cutting up fruit to dehydrate it and these super cute little baby outfits! We still dont know if its a boy or a girl so we got one for each! :)

Then we made a stop at Lowes and then headed to Walmart where we got the doggies some new beds! They are getting kicked out of the baby's bedroom and moving them into the garage so we decided to get them some big beds to make the transition go a little better :) Here is Tyson testing out his new bed, I think he likes it.

A little early, but we went and got my birthday presents last night! I am going to wait to open the sewing machine until my actual birthday. But I was too excited that I get to make my green (spirulina) smoothies again not to open up my new blender! So its smoothies for breakfast this morning! Oh, And I was 13 weeks yesterday! So that means that I have made it through the whole first trimester! Yesterday when we were at the exchange Brian looked at me and said.... "Babe you are getting a belly theres a baby in there!" So he is excited too!

Dehydrating Fruit!! Its really easy, all you have to do is cut it up and put it in the dehydrator. It makes a great snack because it is just the fruit and no added sugar or anything like that! Problem is we go through it so fast I cant keep up with making it!

White Cheese Bread Dip!

I realize that I am on a recipe kick but just go with me on this one. :)

I love love love the bread that I made and blogged about the other day. I ran across this cheese dip over at thelazyorganizer.com and thought that it would be perfect to take with my bread over to Maryns house for hang out with Emma night part 2! I reminds me alot of Alfredo sauce and it would make a great dip for bread sticks or french bread too! Sorry for no picture but it was just a white bowl with white sauce, i think you can handle imagining that one :)


White Cheese Dip

16 ounces of cream cheese
1/2 cup butter
1 1/2 cups Parmesan cheese
2 cups milk
Salt and Pepper to taste

Heat all ingredients in microwave, stirring occasionally until melted. Remove from microwave and whisk to thicken it up a bit. Then you are ready to serve! Feel free to cut this recipe in half. It makes a ton!

If there are any leftovers, I think tomorrow night for dinner I am going to make some pasta and then pour this white dip over it and then pour some marinara sauce over that and then bake it!

Apple Crisp

I made this recipe to take to a get together at our friend Maryn's house last night. Our friend Emma, her mom, and her adorable son Hunter are in town for the weekend! We are going over to hang out with them again tonight so what should I make this time?

Apple Crisp

5 cups apples, cored and cubed
1 cup flour
1 cup oats
1/2 tsp. cinnamon
3/4 cup brown sugar
3/4 cup butter

Preheat oven to 350 degrees. Place apples on the bottom of a small dish or pie pan (I used a pie pan). Combine flour, oats, cinnamon, and brown sugar and place on top of the apples (I actually put only half of this mixture on top so that I wouldn't overflow my dish and it was just as good with only half but next time I will use a bigger pan so I can get all of the topping on there). Melt the butter and drizzle over the top. Bake for 40 minutes or until apples are tender.

You must make this bread!

Seriously this bread is amazing. It is not hard to make at all and it smells amazing while cooking, kinda like the smell that comes out of the Auntie Anne's Pretzels place. Yumm! I made it as two loaves, and when I made the cuts along the top I poured 2 tablespoons melted butter into the slit and all over the top rather than brushing with melted butter at the end. We ate half of one with dinner and I cant wait to try it as toast in the morning!

Buttertop Bread

Dough
5 cups King Arthur Unbleached All-Purpose Flour
2 teaspoons salt
1/3 cup potato flour OR 1/2 cup dried potato flakes
2 1/2 teaspoons instant yeast (SAF Nevada Gold preferred)
1/3 cup sugar
1 large egg
4 tablespoons butter
1 1/2 cups water

Topping
1 to 2 tablespoons melted butter

Mix and knead all of the dough ingredients till you've made a smooth, though somewhat sticky dough. Place the dough in a lightly greased bowl, cover the bowl, and allow the dough to rise for about 90 minutes; it should become quite puffy, though it may not double in bulk.

Shape into an oval. Place the dough in a wide, 2-pound capacity loaf pan, measuring about 12" x 6"; our Hearth Rye Pan, is perfect for this loaf*. Using a pair of scissors, cut the loaf vertically down the middle from end to end, almost but not quite to the bottom of the pan. Cover with a proof cover or lightly greased plastic wrap, and allow it to rise till it's crowned about 1 inch over the rim of the pan.

Bake the bread in a preheated 350°F oven for 45 to 50 minutes, till it's golden brown; tent it lightly with aluminum foil about 20 minutes before the end of the baking time, if it appears to be browning too quickly. Remove the bread from the oven, and brush it with melted butter. Yield: 1 large loaf, 22 slices.

*If you don't have a pan this size, divide the dough in half, and bake it in two 8 1/2 x 4 1/2-inch pans for 30 to 35 minutes.

Nutrition per serving (1 slice, 50g): 130 cal, 2.5g fat, 3g protein, 25g total carbohydrate, 3g sugar, 0g dietary fiber, 15mg cholesterol, 220mg sodium.

I am twelve weeks today! Yay! I feel alot better this week! No throwing up! Except for a tiny bit today, but that really doesn't count because the only reason was because I choked on my vitamin. I hate those vitamins! Well anyways the pregnancy is going great and we cant wait to find out if its a boy or a girl!!

Snow Day

We had a snow day the day before yesterday! I never thought I would see snow like this here in North Carolina!! The dogs loved it! They were so funny!

We had our first real doctors visit yesterday! The best part about it was that we got to hear our babys heartbeat! When she put the little thing on my stomach she said not to worry if we dont hear it right away because the baby is so small sometimes it takes a little while to find the heartbeat but right when she put it on my stomach we heard the heartbeat! It was so amazing! Also my due date changed back to August 6th. I knew that that utrasound @ 6 weeks would be more accurate than the little chart thingy! So Yeah August 6th so that puts me at 12 weeks tomorrow. I am going to go back and change the post with my tummy picture on it.

Terra Cotta Pots

For some reason I just love Terra Cotta Pots. Everytime I walk into Michaels I love seeing all of the different sizes of the pots. There are tons of projects that you can do with them too! Here are a few of the projects that I like:

Terra Cotta Pot Wreath
I really want to start gardening and I think that this wreath would be so cute hanging from an ivy covered arbor or an entrance into a garden.


Terra Cotta Pot People
I would use the small pots for this one and then I would plant chia or something like that in the top pot to make the hair. I think this would be a good one for the kiddos.


Terra Cotta Pot Nativity
When our kids are old enough I think it would be cool for them to each paint and make their own and then they could each have a little nativity to go on their dressers.


Terra Cotta Fire Pit
This image isn't terra cotta but it would be a great project for a large terra cotta pot. This website even has a video on how to make this little fire pit. I think it would go great on our deck!

This is just so that you can get a laugh today and be thankful that you were not sitting next to me on our plane ride home....

So on our flight from Seattle to Atlanta it was one of those cool big planes with 2 seats then 3 seats then 2 seats and all the seats have tv screens in the back of them. Well anyways we got to have the two seats right in front of the bathroom. So the whole flight went by really fast and then when we started our decent into Atlanta all of a sudden I felt really sick and immediately just threw up all over the aisle way. I didnt have time to grab one of those air sick bags or to make it to the bathroom which was 2 steps away. Pregnancy was not liking me so much that day.

So yeah that was the most embarrasing thing ever and I just thought I would share it with you because now I can look back and laugh.

A little Ronk baby is on the way!!!



That is why I haven't been posting very much. That is also why I took the comments off of my blog for a little while because I didnt want those who knew to write a comment about it and then those who didnt know yet would find out through the blog. We made the announcement at our church today. It was exciting! Right after they announced us another couple announced that they were pregnant too. And their due date is the same day as ours! Isnt that crazy? So the big day is July 29th. I had told everyone in Washington that it was August 6th but when I went to the doctor they said that this date was more accurate. Im still not sold on how they figure this date stuff out but when we have our ultrasound in about 8 weeks they will give me a for sure due date.

We had a really great trip to Washington. We saw a ton of snow that I forgot to take a picture of.

I got to hang out alot with KDW and that was really fun! She taught me how to knit. I miss her.

We had to say goodbye to Kyle and Joy. That was sad. We will miss them but we are so excited that they get to live in Japan for three years! Pray that they would make it safely there as I think they leave this week.

I got to eat tons of Taco Time. I love Taco Time. They raised their prices though....

We got to spend lots of time with family. My mom loaded me up with Kitchenaid blue utensils. Thanks Mom!

We had a pinochle party. It was great! I came in third place! Brian and I made cookies in the shapes of hearts, diamonds, clubs, and spades. No one ate them though because we didnt have enough food coloring for the frosting so they turned out pink and brown rather than black and red. They were ugly.

So yeah I think that was pretty much our trip. Oh yeah and I threw up alot. Its getting better now though.

Happy New Year!!!

I usually dont do these because I never follow through so I am going to pick some easy ones!

1. To take more pictures! I have not been good at taking pictures on this trip and I need to get better at capturing all these memories!

2. To eat more veggies. I buy them but then I dont eat them in time so my compost gets to eat them. I do like them though especially bell peppers. Which brings me to my next one...

3. To start a small garden in our backyard. Since we now know that we will be living in NC I have no more excuses not to start a garden. I would like to do... Bell Peppers, Tomatoes, Carrots, Lettuce, Artichokes, Blueberries, and Strawberries. I am not really sure how to grow any of those or anything really so we will see how that works out.

4. Learn how to can things. We have a plum tree in our yard that makes awesome plums but there is no way we can eat them all in the short time that they are ripe. And I have a recipe for candied apple rings that I really want to try.


So those are my resolutions. Looks like I will be doing a lot of reading up on stuff!


Oh and my last resolution will be to send out Christmas cards next year! Sorry to everyone for not getting a card out to you. I really will send out cards next year. I think we will be staying in NC next Christmas so that will give me a bit more time to get my act together :)
