Meal Plan Monday... on Tuesday :)

Planning this weeks meals has been quite a bit harder than planning last weeks meals. I am starting to get a little tired of eggs and meat is also just not that appealing to me. 

Also... I hate lunch.... It has always been my trickiest meal hence why I used to just snack my way through that part of the day. It's time to just keep trucking though so that I can form new healthy habits! On the plus side I really haven't been snacking at all, I think the balance of proteins and fats at each meal is totally satiating! 

I am already on Day 9 of the Whole30 and thus far it has gone by super quickly! 


Here is my meal plan for this week! 
(Whole30 week 2) 

Monday- 
Breakfast- Hard boiled Eggs
Lunch- Egg Salad with Sweet Potato Fries and Avocado Ranch (We didn't like the ranch)
Dinner- BBQ Pulled Pork w/ sweet potato rounds and avocado (This pork is our favorite!)

Tuesday- 
Breakfast- Blueberry Breakfast Clafouti (It was super yummy!) w/ more Blueberries and Tomatoes
Lunch- Leftover pulled pork or leftover chili

Wednesday-
Breakfast- Poached Eggs over Sweet Potato Hash 
Lunch- Spicy Tuna Cakes (from the NomNomPaleo iPad app) w/ Kale Chips and Honeydew Melon
Dinner- Grilled Chicken and Veggie Kabobs

Thursday- 
Breakfast- Over Easy Eggs w/ Avocado and Tomatoes
Lunch- Leftover Chicken and Veggie Kabobs
Dinner- Super Fine Salmon w/ Roasted Asparagus

Friday-
Breakfast- Pizza Quiche
Lunch- Tuna Salad

Saturday- 
Breakfast- Leftover Pizza Quiche if it's yummy :)
Lunch- Leftovers or Chicken Salad
Dinner- Salsa Chicken Lettuce Wrap Tacos w/ Avocado and Salsa

Sunday-
Breakfast- Hard boiled Eggs
Lunch- Leftover Salsa Chicken
Dinner- Meatloaf with Mashed Cauliflower and Roasted Green beans

*As with last week, if the meals that I linked to aren't completely Whole30 compliant, I will tweak them so that they are. i.e. swapping out the butter for ghee, leaving out vanilla extract, making sure my meats don't contain sugar, that kind of thing!

A little while ago I heard about a program called Whole30. Every blog I have ever read about it has totally sung its praises! I wanted to know more so I bought It Starts with Food on my iPad. When I first started reading the book I thought I would start a Whole30 in January, by the end of the book I wanted to start immediately! 

I haven't mentioned it very much but I have been dealing with a lot of hormone related issues that started back in December following my abdominal surgery that confirmed my infertility. Pre-surgery my doctor placed me on birth control so that I could have the surgery and post-surgery he wanted me to remain on birth control for the rest of my life.... seriously.... 

Long story short... the birth control made me CRAZY. I stopped taking it after 3 months but am still dealing with the hormonal repercussions of all that hormonal junk that I put in my body. 

All that said, my number 1 goal with doing the Whole30 is to regulate my hormones!

Here is a list of all I hope to accomplish with Whole30
1. Regulate Hormones! 
2. Get clear skin! (I struggle with food related eczema and hormonal acne)
3. Break free from my sugar dependence
4. Form a better sleep cycle

And...

I would be lying if I said that I didn't want my jeans to fit a little better too! :) 
I plan to do weekly recaps with all of my meals for that week since I have loved being able to read other blogs daily recaps! Here was my day 1:
































One of the key's to a successful Whole30 is planning so I have meticulously planned out our meals for this week! 

Monday- 
Breakfast- Eggs with Tomatoes, Cucumbers, and Macadamia Nuts
Lunch- Salad with Chicken, Apples, Walnuts, dressed with Olive Oil, Balsamic, and S&P
Dinner- Roast Chicken (made with ghee) with Carrots, Parsnips, Green Beans and Raspberries

Tuesday-
Breakfast- Eggs with Tomatoes
Lunch- Tuna Salad, Try out this Avocado Ranch Recipe, Carrots, and Cucumbers, and Strawberries
Dinner- 5 minute Chicken (made with ghee) with Broccoli

Wednesday- 
Breakfast- Hard Boiled Eggs with Avocado and Tomatoes
Lunch- Chicken Salad with Grapes and Pecans 
Dinner- Salsa Chicken Lettuce Wrap Tacos with Guacamole, Salsa, and Sauteed Veggies

Thursday- 
Breakfast- Try a frittata? 
Lunch- Leftover Salsa Chicken
Dinner- Paleo Chili with Baked Sweet Potatoes

Friday- 
Breakfast- Eggs with Leftover Sweet Potatoes
Lunch- Leftover Chili with a Salad
Dinner- Steak with Butternut Squash and Kale Bake

Saturday- 
Lunch- Egg Salad with Veggies
Dinner- Mustard Lime Chicken with Broccoli 

Sunday- 
Breakfast- Hard boiled Eggs with Fruit
Lunch- Chicken and Veggie Kabobs
Dinner- Leftovers from the week

Happy Monday! 

It will be a busy week so there isn't too much to plan! Most of these meals are mainly from the freezer! 

Tuesday- Sriracha Salmon
Wednesday- Savory Chicken with Roast Green Beans
Thursday- Out
Friday- Out

Last week's Greek Meatballs were just okay for me, but Brian really liked them. The Pulled Pork was a huge hit! We all loved it and I will definitely make it again and again! I didn't get a chance to make the Sriracha Salmon or the Meatloaf so those will get rolled over to the coming week and weeks!

Somehow I got out of the habit of posting my weekly meal plan.... 
(Actually I got out of the habit of posting anything but that is beside the point!) 

I want to get back to it though!

Tuesday: Greek Meatballs w/ Green Beans
Wednesday: Pulled Pork w/ Sweet Potato Rounds
Thursday: Sriracha Salmon w/ Sauteed Carrots
Friday: Meatloaf, Mashed Potatoes, and Peas

I am trying to cut back on the grains that we consume so this week of meals are more meat based that I usually do. The Greek Meatballs and Pulled Pork are both new to me recipes! When I post next week's meal plan I will let you know how we liked them!

I don't know about you, but I am ready for April! It means that we are that much closer to Summer! We had a gorgeous day on Sunday which gave us a glimpse of how wonderful summer will be! I can't wait for days spent outside playing in the kiddie pool and sandbox with the girls! It will be our last summer here and we are going to make the most of it!

The Lemon Butter Salmon that I link to below is super delicious! I highly recommend that you try it!

I'm going to try my hand at monthly menu planning and see how it goes... I may not like it and switch back to the weekly plans but I might as well give it a shot! I got a new Lilly Pulitzer agenda for Christmas and I love that it has two monthly overviews for each month in different spots. It is great for meal planning! My new plan is to try to do soups on Mondays and crockpot meals on Wednesdays... this will kick in more in February because I have totally forgotten what is in our freezer and I need to do an inventory of it all asap!

Monday- I was sick so the Hubs picked up some soup and bread at Haggen

P.S. The girls and my new favorite snack is plain greek yogurt with a little drizzle of honey!

I'm was a bit stumped with what to make for dinners this week... With the weather being so cool I have been wanting soups all the time, the problem with soups is that they are hard for the girls to eat without making a huge mess! Thursday I am trying my friend Emma's BBQ Chili, I plan to make it vegetarian by adding 2 extra cans of beans instead of the ground beef!

Wednesday- Slow Cooker Shredded Chicken Tacos
Thursday- Slow Cooker BBQ Chili w/ Sweet Potatoes

I am feeling pretty good! The only time my tonsil spots bother me now is when I yawn. Yawning really hurts but thankfully I don't need to yawn constantly :)

Feeling better means I am back to cooking! Yay! Having meals brought to us was such a blessing but we also ate more than our fair share of fast food and boxed macaroni and cheese. Time to get back to normal!

{I am going to try to hold off on using freezer meals for a while so that they can be saved for after my surgery!}

Brian's Fall quarter starts today! I asked him if I could take a first day of school picture of him but he declined :). Kenley starts pre-pre school on Wednesday, so I will take tons of pictures of her first day!

Weekly Meal Plan 

Monday- Leftover Stephanie's Goulash
Tuesday- Roast Chicken (making chicken broth with bones) 
Wednesday- Southwest Soup (made with leftover roast chicken)
Thursday- Crockpot Lasagna

I have said it before but my goal is to have a crockpot meals planned for Monday's and Wednesday's because I have Titus 2 some Monday's and the pre-pre school will be on Wednesday's. This week it is working out a bit different though because I am due for another crockpot meal prep day. 

I am having my tonsils removed on the 3rd and I have heard that the recovery time for adults is 2-4 weeks so I want to use this week to get really far ahead with freezer meals. Now that we have tried all of the freezer meals I made last month, there are a few things that I will do differently this time.  

Last time I made:

For the Freezer: 
2 bags of Cilantro Lime Chicken with Black Beans and Corn (We liked! I will make again but next time I will add the cilantro at the end of cooking rather than adding to the bags) 
2 bags of Teriyaki Chicken (The sauce was overpowering. I will try these again though with a different brand of teriyaki sauce. Next time I will also,not add the additional sauce on the day of cooking and I will add the pineapple 30 minutes before it's finished cooking) 
2 bags of Healthy Mama BBQ Chicken (We liked this! Next time I will chop the peppers and onion smaller and double the sweet potatoes)
2 bags of Sausage and Peppers  (We didn't like this. I won't be making it again) 
2 bags of Savory Chicken (This was okay but I won't be making it again) 
1 bag of Stephanie's Goulash (I liked it but Brian didn't. If I make it again I will probably make it without meat.) 
1 bag of Newlywed Beef Tips (This was okay but I won't be making it again)
2 bags of Black Beans 

Day of Crockpot meals:
Crockpot French Dip Sandwiches (These super are yummy!)
Shredded Chicken for tacos. (Super yummy! 1 pkg of chicken breasts + 1 jar of good salsa, cook on low 6-8 hours. Shred and use for tacos!) 

*Next time I make all of these meals I will cut all of my veggies smaller especially my onions and peppers much smaller.

A big batch of Chicken Stock with bones from Roast Chicken
A big batch of Black Beans 
4 Lasagnas (I'll post my recipe after I make them!) 
1 bag Ginger Cranberry Pork Roast (From MamaAndBabyLove ecookbook)
1 bag Cumin Cinnamon Beef Stew (From MamaAndBabyLove ecookbook)

I'm a little late with posting my weekly meal plan because we were away this past weekend at a Dude Ranch! The trip was everything we hoped for and now we are left with horse fever! I'll post pictures tomorrow!

Here's what we will be chowing down on for dinner this week!

Monday: Take-Out Pizza (on the way home from our trip)
Tuesday: Sweet Potato Carbonara and Salads
Wednesday: Leftovers
Thursday: Stephanie's Goulash
Friday: More leftovers... you would think that with us being gone all weekend we wouldn't have many leftovers but that is not the case!

P.S. The Sweet Potato Carbonara is super delicious! It could also be called "sweet potato breakfast hash". It would be perfect for brunch!

Weekly Meal Plan 9/10 - 9/14

The girls and I are currently home sick with fevers. Nothing makes you feel like a "real grown-up parent" as having to care for your poor sick kids. They have been pitiful and both of their fevers peaked at about 103.5 yesterday. All of our fevers are on the lower side today so it looks like we are starting to get better!



Here is my meal plan for the week: 

September 10th- Monday- Crockpot BBQ Chicken
September 11th- Tuesday- Blackberry BBQ Salmon (we didn't end up having it last week)
September 12th- Wednesday- Lasagna Soup
September 13th- Thursday- TBD due to our Anniversary
September 14th- Friday- TBD due to our Anniversary

Our anniversary is on Sunday and we had planned to go to Arizona but then tickets got really expensive so we had to scrap those plans. Now we are trying to figure out somewhere else fun to go. Any ideas?

My new goal is to have our Monday night and Wednesday night dinners be freezer/crockpot meals. As soon as we make our way through all of the freezer meals that I made I will do a recap post and let you know what we liked, what we didn't and what we will change for next time!

Tuesday- Blackberry BBQ Salmon w/ Veggies
Wednesday- French Dip Sandwiches w/ Side Salads
Thursday- Cookout with Family, I'm bringning Raw Zucchini Alfredo
Friday- Homemade Pizza Night

(I plan to leave Saturday's and Sunday's open for leftovers or eating out)
