We have this great soft serve ice cream maker that we bought for Kenley's 2nd birthday party and sadly it has remained in the box for far too long!
This week I decided that we needed some homemade ice cream in our lives! Healthier ice cream that I can feel good about letting the girls eat!
I think they liked it!
{This is actually Claire looking pretty clean... by the time she was finished there was no way that I could even carry her to the tub without becoming a sticky mess myself}
Chocolate Coconut Milk Ice Cream
Ingredients:
- 2 cans of full-fat coconut milk
- 2/3 cup cocoa powder
- scant 2/3 cup raw honey
- 1 teaspoon vanilla
Directions:
- Blend ingredients together (in a blender) until the mixture is smooth and there are no lumps.
- Pour mixture into an ice cream maker and make per ice cream maker instructions (mine took about 20 minutes)
- Enjoy!
*Our ice cream maker is "soft serve" so the ice cream is consumed right after it is done churning, I froze the leftover ice cream and it came out really hard. Nothing a little time sitting on the counter can't fix but just a heads up!
My mind is rolling with more homemade dairy-free ice cream ideas! Next up.. Toasted Marshmallow and then probably Blackberry!
