I have been craving all things peanut butter lately. Especially peanut butter cookies! I think it is a "want what I can't have" kind of thing. Though my allergy tests came back saying that I wasn't allergic to peanuts my body definitely does not react well to them!
I really like almond butter but sunflower seed butter is definitely the next best thing to peanut butter. I usually make healthy versions of treats but sometimes you just need to use some sugar! These cookies are such a cinch to throw together because the ingredient list is so short! Most people make these cookies with peanut butter but I think that any nut butter would work great!
Sunflower Seed Butter Cookies
Ingredients:
- 1 Cup Sunflower Seed Butter
- 3/4 Cup Sugar
- 1 Egg
- A few mini chocolate chips, thrown in for fun!
Directions:
- Preheat oven to 350 degrees
- Combine all ingredients
- Form into small balls and flatten with a fork in a crosshatch pattern
- Bake 8-10 minutes
- Enjoy!
*The dough freezes great! I can't be trusted with lots of cookies in the house so I like to make small batches and freeze the extra dough for a few days later!

I will for sure try these. Hannah is allergic to peanuts and misses peanut butter - it was her FAVE!
