"Smoked Salmon" Spread

Reading some of my favorite food blogs, such as The Pioneer Woman and Buns In My Oven, has become a little disheartening since going dairy free because I know that I can only drool over their cheesy and dairy filled recipes. Vegan food blogs have come to my rescue because I know that they will definitely post recipes that I can eat!

Growing up as a vegetarian I was really never one for "mock" meats. I never liked Boca or veggie burgers but would rather just enjoy the bun, lettuce, cheese, tomato, and condiments. I dreaded going to barbeque's where the host would make veggie burgers 'just for me' which meant that I had to choke those oddly flavored patties down. Fake meat just isn't my thing. For that matter neither is tofu... I was a vegetarian the first 18 years of my life but I have probably only eaten tofu a handful of times... Most of those times it has been hidden in desserts.

However, in my old age I am becoming more adventurous with my cooking and eating... So you never know, I could be whipping out the tofu recipes left and right any day now :).

Growing up in the Northwest I developed a love for smoked salmon. When I came across this recipe for a raw vegan smoked salmon spread I was intrigued and knew I had to give it a try! It received a thumbs up from both my parents and from Brian and I!

"Smoked Salmon" Spread

Ingredients:
1 cup carrot juice pulp (the leftover pulp from juicing carrots)
1/2 cup raw soaked cashews
2 T olive oil
The juice of half a lemon
1/2 t sea salt
2 T dulse
1/4 - 1/2 t liquid smoke (to taste preference)
1/4 cup diced red onion

Combine all ingredients in food processor and process until smooth.

Can I just eat the spread and leave out the salmon?? haha You know me and salmon do not mix! :-) Still laugh about that guy in the fish market!

wait. is this salmonless salmon spread? i think i find this sick. but i also find smoked salmon sick, so i guess that's not that weird.
