Microwave Caramels

Yum! This recipe is super simple and best of all is doesn't require a candy thermometer. I dont have one so there are always recipes I want to try but cant until I buy one of those pesky things! I recommend you use a really big bowl. I didn't so I got to clean out my microwave today. Yay! Haha they were worth it though!

Microwave Caramels

1 Cup Karo Syrup
2 Cups Sugar
2 Cubes Butter

Cook for 5 minutes uncovered in the microwave.

Stir.

Add:
1 can sweetened condensed milk

Cook in he microwave for 11-13 minutes.
Stir every 3 minutes

(test drop in ice water...if you can flatten the caramel in your fingers it is ready)

Cool for 30 minutes in a greased 9x13 pan
Cut the caramels into small pieces using cooking shears (seriously dont try it with the knife its not pretty that way)
Wrap in waxed paper or plastic wrap

I found this idea over at Epicurean Style. She makes really cute aprons. I love the Madison style.
