French Onion Kale Chips

Mmmm! Kale Chips! We love them! I even caught Kenley sneaking them out of the dehydrator last week! 



I always hesitate to say that something tastes just like something else because then if the healthier version doesn't taste exactly like the real thing the healthy version will by default be not as good. I have learned that I need to be creative with my wording so that I don't put a bias in Brian's head before he even tries my healthy versions of things. 

However, I think these kale chips taste just like how I remember French Onion Sunchips tasting. They are delicious and will totally satisfy that salty chip craving! 


French Onion Kale Chips
Ingredients:

  • 2.5 cups cashews (soaked for 5-6 hours and drained)
  • 3/4 cup red onion (chopped)
  • 1/2 Tbsp raw apple cider vinegar
  • 1/2 Tbsp lemon juice
  • 1 Tbsp raw honey
  • 2/3 cup water
  • 1 tsp pink salt (plus more for topping)
  • 1 heaping Tbsp nutritional yeast

  • A large bunch of kale torn into bite sized pieces with stems removed
Directions
  1. Combine first 8 ingredients in a food processor and puree until smooth
  2. Coat kale with cashew mixture and place on dehydrator trays
  3. Sprinkle kale chips with a little bit of pink salt
  4. Dehydrate until crispy. In my dehydrator I typically do it at 115 degrees for about 24 hours. 
  5. Enjoy! 
Notes: 
-Depending on how big your dehydrator is or how much kale you have you may have extra cashew mixture leftover. You can store the leftover cashew mixture in the fridge for up to 1 week. I like doing this because then as soon as my first batch of kale is done I can start another batch with minimal prep work!

I seriously need a food dehydrater. Oh the possibilities!! Any suggestions on brands?

I have a 9 tray excalibur! I love it. The only drawbacks are that it is huge (which is also a pro, but we live in a tiny tiny space) and that it is loud, when it is running it sounds like a microwave. I think it would be idea to keep it in a garage so that space is saved and to contain the noise!
