
Not Nacho Cheese is a bit reminiscent of the Velveeta Rotel Dip but its packed with veggies and is dairy free!
Not Nacho Cheese
Ingredients
- 8 baby Yukon Gold potatoes
- 4 carrots
- 1/2 a large onion
- 3 cloves garlic
- 1 cup of water
- 1/2 cup navy beans
- 2 heaping tablespoons nutritional yeast*
- 2 tablespoons olive oil
- (pink) salt & pepper
- 1/2 can Rotel chopped tomatoes and green chilies
Directions
- Chop first 4 ingredients into small uniform pieces
- Add chopped veggies and water to a pot and cook over medium high heat until veggies are soft, about 10-15 minutes depending on size
- Transfer contents of pot to blender, add navy beans, nutritional yeast, and oil to blender and puree
- Add salt and pepper to taste
- Pour contents of blender into a bowl and stir in 1/2 a can of Rotel. (You may use the whole can depending on your tastes)
- Enjoy with chips or however else you would enjoy a cheese sauce!
*Don't leave out the nutritional yeast, it is what makes the sauce taste cheesy!
