Not Nacho Cheese

Sometimes avoiding dairy is no fun, especially if we are having Mexican for dinner... which happens all the time because it is quick, easy, and tasty.

Not Nacho Cheese is a bit reminiscent of the Velveeta Rotel Dip but its packed with veggies and is dairy free!

Not Nacho Cheese

Ingredients
  • 8 baby Yukon Gold potatoes
  • 4 carrots
  • 1/2 a large onion
  • 3 cloves garlic
  • 1 cup of water
  • 1/2 cup navy beans
  • 2 heaping tablespoons nutritional yeast*
  • 2 tablespoons olive oil
  • (pink) salt & pepper
  • 1/2 can Rotel chopped tomatoes and green chilies
Directions
  1. Chop first 4 ingredients into small uniform pieces
  2. Add chopped veggies and water to a pot and cook over medium high heat until veggies are soft, about 10-15 minutes depending on size
  3. Transfer contents of pot to blender, add navy beans, nutritional yeast, and oil to blender and puree
  4. Add salt and pepper to taste
  5. Pour contents of blender into a bowl and stir in 1/2 a can of Rotel. (You may use the whole can depending on your tastes)
  6. Enjoy with chips or however else you would enjoy a cheese sauce!
*Don't leave out the nutritional yeast, it is what makes the sauce taste cheesy!
